Is there really such a thing as vegetarian pizza? You bet. And it’s gaining in popularity around the world. In the US, pizza is usually thought of as tomato sauce, mozarella cheese, and a lot of greasy meat topppings. On this page, you can find some great alternative vegetarian pizza recipes. Pizza with Fresh Vegetables

400 g/ 14 oz peeled plum tomatoes, fresh or canned, weighed whole, without extra juice2 medium broccoli spears225 g/8 oz fresh asparagus2 small courgettes75 ml/5 tbsp olive oil50 g/2 oz//3 cup shelled peas, fresh or frozen4 spring onions, sliced1 pizza base, 25-30 cm/10-12 in in diameter75 g/3 oz//3 cup mozzarella cheese, cut into small dice10 leaves fresh basil, torn into pieces2 cloves garlic, finely choppedSalt and freshly ground black pepper

1-Preheat the oven to 240oC/475oF/Gas 9 for at least 20 minutes before baking the pizza. Strainthe tomatoes through the medium hole of a food mill, scraping in all the pulp.

2-Peel the broccoli stems and asparagus, and blanch with the courgettes in a pan of boiling water for 4-5 minutes. Drain. Cut into bite-size pieces and slice the courgettes lengthways.

3-Heat 30 ml/2 tbsp of the olive oil in a small saucepan. Stir in the peas and spring onions andcook for 5-6 minutes, stirring often. Remove from the heat.

4-Spread the pursed tomatoes on to the pizza dough, leaving the rim uncovered. Add the other vegetables, spreading them evenly over the tomatoes.

5-Sprinkle with the mozzarella, basil, garlic, salt and pepper and remaining olive oil.

Immediately place the pizza in the oven. Bake for about 20 minutes, or until the crust is golden brown and the cheese has melted.

Serves 4

Cooking Tip: This pizza can be made with any combination of fresh vegetables. Most will benefit from beingblanched or sauteed before being baked on the pizza.

Garlic Mushroon Tagliatelle

To serve 4 people:

Tagliatelle ButterFlourMilkGarlicOnion MushroomsOlive OilCheddar, Parmagianno and Ricotta cheeses.Black Pepper CornsRed Chilli (fresh or flakes-[optional])

For the sauce-

chop one large or two small onions, and 4-6 cloves of garlic depending on how strong you want the taste to be. Put into a pan with 4 tablespoons of olive oil. When this is beginning to cook, chop 2-3 mushrooms per person(depending on the size) and add to the pan. Put the lid on and allow to reduce.Meanwhile, melt about 50g of butter in a pan, when it is all melted, add enought flour so it is no longer runny and can be made into a lump, but not so much that it looks dry or floury.Then add heated milk (about 1/3 pint per person) and stir into the butter and flour mixture until there are no lumps. Allow this to heat through and then add the mushrooms and onions.Next add grated 1/2 tablespoon of ricotta per person and some grated cheddar to thinken the sauce.

When the pasta is cooked and drained, add it to the sauce and stir in with grated parmagianno, ground black peppercorns and the chopped or flaked chilli, and serve.

Broccoli-Cheese Polenta Pizza

Olive oil nonstick cooking spray1 log (16 ounces) precooked plain polenta, cut into 1/4-inch-thick slices1 bag (12 ounces) broccoli florets3/4 cup part-skim ricotta cheese1/4 cup freshly grated Parmesan cheese1 teaspoon grated fresh lemon peelGround black pepper1 large plum tomato (4 ounces), chopped

1. Preheat broiler. Spray 12-inch pizza pan or large cookie sheet with olive oil cooking spray. In center of pizza pan, place 1 slice polenta; arrange remaining slices in 2 concentric circles around first slice, overlapping slightly, to form a 10-inch round. Generously spray polenta with cooking spray. Place pan in oven about 4 inches from source of heat and broil polenta 5 minutes or until heated through. Do not turn broiler off.2. Meanwhile, in microwave-safe medium bowl, combine broccoli and 2 tablespoons water. Cover with plastic wrap, turning back one section to vent. Heat broccoli in microwave oven on High 3 minutes or just until tender. Drain.3. In small bowl, combine ricotta, Parmesan, lemon peel, and 1/8 teaspoon pepper. Arrange broccoli evenly over polenta. Drop cheese mixture by tablespoons over polenta and broccoli; sprinkle with tomato. Broil pizza 3 to 5 minutes or until topping is hot.
